Okay, well, maybe I never really had it to begin with, since I’m not sure that using boxed mix counts as baking, BUT I’m happy to report that my 1st “baking” attempt after “The Disaster” went very well. Actually, it went better than well. It went GREAT. Since my brother-in-law, Dan’s, birthday was last week, and since I wanted to make another cupcake recipe from my list, I decided to make Reese’s Peanut Butter Cup Cupcakes. This recipe was incredibly easy. 1 box of yellow cake mix, 1 can of chocolate frosting, a bag of mini Reese’s cups, and regular sized Reese’s cups cut in half. Make the mix. Put the batter in cupcake liners. Put a mini Reese’s cup in each one. Bake. Frost. Put half of regular size Reese’s cup on top. Done. Final Result:

My favorite part about this cupcake is that the chocolate from the mini Reese’s cup gets kind of mixed in with the cake batter as it cooks, so even once the cupcakes are cooled down, there isn’t a hard barrier to get to the mini Reese’s cup. It’s all soft and smooth and wonderful. I still have 4 of these tasty treats in my fridge calling my name. Can’t wait for snack time tonight!
