A Perfect Party, Minus One.

Being the only one of your friends to have the bad cupcake of the bunch is like being the only kid in class who wasn’t invited to the party. You are stuck hearing all the wonderful fun things that happened, while crying on the inside that you weren’t a part of it all.

Okay, maybe that’s a teeny tiny bit dramatic. But I can tell you, eating the only bad cupcake is still no fun.

About a year ago we reviewed Cooks ‘N Cakes located in Ellicott City, MD. At the time, our thoughts on their cupcakes were just so-so. Shortly after, Cooks ‘N Cakes contacted us explaining that they made some changes to their recipes and would love for us to come back and give them another try. Fast forward to about 8 months later—time really does fly by—and we finally made it back to their shop.

Excited to give them another try, I selected three new cupcakes and one Coffee Craze, which we had tried previously. I knew then that I would divide the cupcakes among us Crusaders, plus our good friend and Guest Crusader, Miss Beth Lacey, who I would be seeing that afternoon.

For myself, I selected True Simplicity, a vanilla butter cake with Madagascar vanilla buttercream frosting. I hate complaining about a bad cupcake almost as much as I hate eating it in the first place, but there is really nothing good to say about it. The cake was so dry that it actually crumbled like a cookie. The flavor would have been good, but there was no way to get past the dryness and the frosting was just okay. In my opinion, it didn’t contain enough vanilla flavor and had way too much of a confectioner’s sugar aftertaste. When buying cupcakes, normally I come from the mindset that “you win some, you lose some,” but I was actually upset that I spent $2.50 on this.

I immediately texted Jenn, Elisa, and Beth Lacey to give them a heads-up that my cupcake was inedible, but to my surprise, none of them had the same reactions. That’s when I realized that, apparently, I had not been invited to the party.

Beth Lacey said that her Split Decision cupcake (banana cake with strawberry frosting and a dollop of chocolate on top) “rocked!” and that it “totally tasted like a banana split!” Hearing this I was a bit perplexed, but relieved she didn’t have the same experience as me.

Then Jenn, who had tried the Coffee Craze before, said that it still had a great aroma and a nice strong coffee flavor. She added that the frosting was nice and smooth, but that the chocolate cake was just basic and nothing really stood out about it.

Elisa’s exact thoughts on her Chocolate Strawberry cupcake were, “The strawberry frosting was really good and the chocolate cake wasn’t bad either.”

So apparently my cupcake was a dud, while everyone else’s wasn’t. I’ve recovered from my $2.50 loss, but am not sure that I’ll be visiting Cooks ‘N Cakes anytime soon. Their location isn’t really convenient to my home, job, or family and friends, and with a cupcake that was as bad as mine was, I just can’t get excited about another visit.

For Cooks ‘N Cakes sake, I really do hope that my cupcake was merely a random fluke. I would hate to see a small business suffer because others have had similar experiences. So, if you are reading this, I encourage you to go and try their cupcakes for yourself, just maybe stay away from the Vanilla?

Warming Up This Winter with Hot Beverage Cupcakes

As a graphic designer, you would hope that I would be impervious to products marketed specifically for the winter season. I know the tactics used to get shoppers to buy these products, so theoretically, this should keep me from purchasing them. Well cupcake lovers, this is not the case. I too fall subject to the snowflakes, fun type, and bold colorful photos. Exhibit A:

When I saw this Betty Crocker Hot Chocolate cupcake mix, I almost danced in the grocery aisle. I can’t help myself. Sure, I know that it’s really just a normal chocolate cake mix with some mini marshmallows tossed in and a sub-par frosting mixture added to the box, but while my head says “don’t succumb to the festive graphics,” everything else inside of me screams, “BUY IT!”

So that is exactly what I did.

It turned out to be a good thing that I purchased this box mix because I signed up to make 3 dozen cupcakes for a charity event and knew the kids would love these. To go along with the “hot beverage theme” I also decided to make two dozen Coffee and Doughnuts cupcakes, which have been on my list for quite some time.

I decided not to modify the Hot Chocolate cupcake mix in order to provide you all with a review of exactly what I thought of Betty Crocker’s winter product. The directions say to beat the frosting while it cooks on the stove and that it will fluff up in the process. Unfortunately, I have no electrical outlet near my stove, so this proved to be a challenge—which I lost. The frosting ended up super runny and there didn’t appear to be enough for twelve cupcakes, so I added confectioners sugar until the consistency thickened and there looked to be enough for the dozen cupcakes I had cooling. This, however, made the frosting lose its marshmallow-like flavor and instead, just taste like sugar. Despite this, it went on the cupcake nicely and I figured the kids probably wouldn’t mind the sugary flavor.

I was really happy with the end result and added little marshmallows and a cookie roll to the top for the finishing touches. Sadly, when I woke the next day, the cupcakes looked like this:

The frosting on about half of them had oozed and melted off the cupcakes, while the other half remained in place. I have no idea what happened. The cupcakes had completely cooled and (ignoring my usual “no fridge rule”) I left them in the fridge overnight, just to make sure the house didn’t get too warm with all the baking I was doing. In the end, I decided that these could not be taken to the event so only delivered six of these and two dozen of the coffee and doughnuts cupcakes, instead of the three dozen I initially promised.

The Coffee and Doughnuts cupcakes actually ended up being much easier to make than the Betty Crocker Hot Chocolate cupcakes. I used my typical chocolate cake modification for box mix (one box of instant chocolate pudding and mini chocolate chips). For the frosting, I made a simple buttercream recipe (3 sticks of butter and about 5 cups of confectioners sugar to taste) and then mixed one to two tablespoons of cream with about a tablespoon of instant decaf coffee and added it to the frosting. I just did everything to taste, so if you like a sweeter frosting you can use more sugar and if you prefer a more buttery frosting, just use less sugar. It’s really as easy as that.

To make these cupcakes even easier, I bought pre-made doughnut holes and placed them on top before delivering them to the party. These cupcakes were a huge hit, and I have to admit, the coffee buttercream was some of the best frosting I’ve ever made.

Since there was some frosting leftover, I decided to freeze it to make cakepops at a later time. I also had some frozen chocolate cake leftover from removing the center of cupcakes for fillings, so all I had to do was thaw the cake pieces and frosting, mix those together, roll into balls, and freeze. For the chocolate coating, I didn’t want it to be too thick, so I turned to one of my favorite blogs, Love from the Oven. From there, I navigated my way to Simply Designing, which recommended to add a bit of vegetable oil to the chocolate while melting it.

The cakepops dipped well into the melted chocolate and, as I had hoped, there was only a thin layer of coating. I was worried that some of my family wouldn’t like them because of the coffee flavor (they aren’t all addicted coffee drinkers like my sisters and I), but the chocolate ended up overpowering the coffee, so everyone loved them. Next time I will add some instant coffee granules to the cake/frosting mixture to bump that flavor up more, but for this occasion, I think it was perfect and that the coffee undertones actually helped to enhance the chocolate flavor.

Even though not all of these hot beverage cupcakes turned out as I had hoped, I still have many “beverage themed” cupcakes I would like to explore, like tea-infused and Dr. Pepper cupcakes. My advice, however, is this: skip Betty Crocker’s Hot Chocolate cupcake mix, and make your own version of a Hot Chocolate cupcake instead. You’ll thank me later.

A Baking Adventure: Mocha Brownie Cupcakes

Up until the week before our DC Cupcake Picnic I still didn’t know what I should make. There would be other bakers there, so the idea of baking from scratch had me nervous but then again, could I make a box mix impress? While at the grocery store, I planned to redeem my coupon for Duncan Hines Frosting Creations and decided on their Mocha flavor. Perusing the isle, I also found some brownie mix on sale: Mocha flavored! The wheels in my head started turning…if I did a brownie instead of a cake, maybe I wouldn’t have to worry about too much scrutiny from the pros. And I always know how brownie mix turns out. Rich, fudgy, delicious.

After making my purchases I gave more thought to my creation. I decided to use brewed coffee instead of water in the brownie mix, just to be sure the coffee flavor really came through, make a dark chocolate ganache filling, and top with shaved dark chocolate.

One of the tricky things about baking brownies in cupcakes sheets is the bake time. I didn’t want to over cook them, so I put it on 18 minutes to start and added 2-3 minutes as needed until they were done. They ended up coming out perfectly, though!

As with most of my other baking experiments (like these Lemon Raspberry cupcakes) I cut holes in the center for the filling. Then, using a small pot and glass bowl (my homemade double boiler), I made the dark chocolate ganache with dark chocolate chips and heavy whipping cream (I learned to do this with my Orange White Chocolate cupcakes and assumed the whipping cream would work in the same way with dark chocolate as it did with white chocolate). I didn’t measure anything out, just eyeballed it. After filling the cupcakes, I decided to also spread the ganache on top so that you could see some of it after frosting the cupcakes.

After mixing up the Duncan Hines Frosting Creation I tasted it and was pleasantly surprised! The base is really sweet, but the flavor add-in toned it down and created good coffee kick. I piped the frosting on top of the brownies and sprinkled the shaved dark chocolate on top. I made regular size cupcakes and minis, thinking that the minis might be nice with a lot of cupcake tasting going on at the picnic.

The brownie bites and cupcakes ended up being a big hit at the picnic! No one seemed to think a brownie was out of place and they were so easy to make. And, since the Mocha Frosting Creation worked well, I’m curious to try some of the other flavors!

Florida Fun, Relaxation, and Treats! Sassy Cakes in Naples, FL

As you may have already read from Jenn’s past two reviews (here and here), we had a great start to our Florida vacation! After a week of relaxing, visiting with family, swimming in the pool, going to the beach, and eating TONS of great food, we arrived at the last day of our trip. Before getting to Florida, we had already planned to do some cupcaking with our cousin and her daughter on the Friday before we left. Excited to have new people to share our passion with and happy to spend more time with them, we decided to visit two cupcake shops in Naples, Florida: Sassy Cakes, a former Cupcake Wars contestant, and Simply Cupcakes of Naples.

Our first stop was Sassy Cakes, tucked behind a shopping strip on 4th Avenue South in Downtown Naples. The first thing that jumped out to me in this cute little shop was an adorable kids’ table adorned with a hand painted cupcake graphic.

This table really sets the whole tone for the shop, which also has cupcake trinkets scattered throughout, cupcake photography hanging on the walls, and a mismatched collection of plates which their cupcakes are served on for “dine in” customers. One of my current obsessions is finding cute and different dessert plates at flea markets and antique stores, so I was immediately in love. Cupcakes and fun plates? It couldn’t get any better for me at that moment.

The owner and baker, Bayah, could not have been more sweet as she described the flavors and waited for us to make our choice. Normally I don’t have too many issues when it comes to flavor selection, but Sassy Cakes had so many I wanted to try, including mini cupcakes, that it took me forever. I finally decided on a full size Hazelnut Espresso Cafe and three mini cupcakes: Banana Pudding, Lemon Parade of Blueberry, and Caramel by the Sea. Jenn and our cousin, Megan, decided on a full size Banana Pudding, while Megan’s daughter and Jenn’s husband each choose a full size Cookies N Cream.

Since it was only 11am, I thought the Hazelnut Espresso Cafe cupcake would be the perfect late morning treat. Plus hazelnut flavored coffee is my go to beverage when I need a morning – or afternoon – pick-me-up. (I’m not sure how I would survive without my Hazelnut Kuerig K-cups.) The chocolate cake on Sassy Cake’s Hazelnut Espresso Cafe cupcake was moist and filled with a rich chocolate hazelnut filling. The espresso frosting could have had a stronger espresso flavor (in my opinion) but Jenn thought it was absolutely perfect, so I guess maybe I just like my coffee strong? 😉 Overall this was a really tasty cupcake that I would definitely get again.

The Cookies N Cream cupcake was a big hit with Jenn’s husband, Dan, and my cousin’s daughter. When I asked Dan his thoughts on the cupcake he responded with and enthusiastic “Ooooo…. Man…. It was GOOOOD!” He also added that he thought Sassy Cakes was awesome!

While the first two flavors were quite delectable, the stand out winner of the day was the Banana Pudding. I’m really glad I took a mini version of this flavor home with me, however, I’m kinda wishing that I had gotten a full size one. The soft, moist, banana cake was packed with flavor and the banana cream filling was spot on. This is a cupcake I could eat again and again.

The other two mini flavors I brought home with me were the Lemon Parade of Blueberry and the Caramel by the Sea. Looking back, I should have selected full size of these flavors too, but I was trying to be good…

The only other time I’ve had a Lemon Blueberry cupcake was from Kupcakes & Co. and since they are one of my all time favorite cupcakeries, the competition was tight. Sassy Cakes did a great job on their version, but if I’m given the opportunity again, I would definitely try the full size option because I only saw a couple of fresh blueberries in the cake. Even with that though, the cupcake was moist and fresh tasting, so I really enjoyed it.

The last of my mini morsels was the Caramel by the Sea. I’m a sucker for anything with salted caramel and I unfortunately devoured this cupcake before taking any mental notes. But I guess that almost speaks for how good it really was and Jenn confirmed that it was one of her favorites too.

As I mentioned above, Sassy Cakes was featured on Cupcake Wars, and in their season 3 episode, the Tim Burton Bake Off, they were eliminated in the first round because their tapioca filling didn’t set up leaving the cake mushy. I can personally attest that this must have been a fluke due to the tight time constraints, because all the cake and fillings were perfect in the cupcakes we tried. They bake their cupcakes fresh daily and it shows! Curious as to what happens to the leftover cupcakes, we asked if they worked with a local food shelter and were pleased to find out that they work with an organization called Maria’s Birthday Wish for the Homeless. Maria’s Birthday Wish works with several bakeries and shelters to bring happiness and recognition to men, woman, and children who are often forgotten on their birthdays. Family Date to Snickerdoodles Bakery

What would a family date night be without cupcakes? Probably still fun, but cupcakes make everything better, right? When my husband and I heard that the shopping center where Snickerdoodles Bakery is located would be celebrating their anniversary and offering special deals from the tenants, including free cupcakes between 5pm and 7pm, we decided that it was time for a family date. It had been almost 8 months since we’d taken our daughter, Leah, out to dinner with us. We were still scarred by an attempt to have dinner out when she was 2 months old, which ended with my husband and I eating separately while we tried consoling our screaming baby in the kids’ play area of Chick-Fil-A. But, with her eating more “grown-up” foods and being on a solid sleep schedule, we thought a family date night was long overdue.

Baby in tow, we headed to Hampstead, MD. During dinner Leah behaved brilliantly. She smiled at the staff and other patrons, ate her food and ours, and chatted everyone up like she owned the place. We left with smiles on our faces because we were so proud of our daughter (and maybe, just a little, because it was cupcake time).

Prior to leaving for our family date, I saw on Facebook that Snickerdoodles had a margarita cupcake (for Cinco de Mayo) and Java Chip, a flavor I hadn’t tried before (which is hard to believe after the 12 or so flavors we’d already sampled). We picked up those two flavors, as well as our free Vanilla-Vanilla cupcakes.


(I couldn’t resist taking a peak at our selection on the way home. The free cupcakes were normal size, but one of the things we love about Snickerdoodles is their super-sized cupcakes!)

Vanilla-Vanilla
Snickerdoodle’s vanilla cupcake with vanilla American buttercream frosting is the perfect birthday cake cupcake. The sweet frosting took me back to birthdays growing up, and the moist cake packed ample vanilla flavor. I rarely purchase the classics because I’m so intrigued by fancy flavors, but this is one I’d go back for!

Margarita
Since this was a margarita cupcake, I was really hoping to taste the flavor of tequila…and I got it! There was plenty of tequila in the lime filling. It complemented the lime cake and whipped frosting, giving the true taste of a well mixed margarita (minus the salt). The green cake was also very festive for the occasion. My husband and I really wish this cupcake was a summer offering, but it was just for a limited time. However, Snickerdoodles does have a key lime flavor for the summer, which I was told is pretty much the same, without tequila in the filling.

Java Chip
Margaritas may be one of my favorite cocktails, but I love anything that is coffee flavored. Add chocolate and it’s a winning pair! However, the java was a little lost amidst the chocolate in this cupcake. While I did miss the coffee flavor I’d been looking forward to, it was easy to forget once you were submerged in decadent chocolate. The java chocolate chip cake was filled with chocolate ganache and topped with chocolate buttercream and chocolate covered espresso beans.


(My husband told me I should have eaten the chocolate covered espresso beans with the cupcake, but I opted not to, otherwise I’d be up all night!)


(I’m speechless. All I can think is, I want another one.)

Leah has been on many, many cupcake excursions with me, but this was the first one that occurred after 5pm, and it was a success. I have no doubt that she’ll become used to all family date nights ending with cupcakes!

Favorite Cupcakes on the Outskirts of Baltimore City | Starry Night Bakery and Coffee House | Westminster, MD

Every Tuesday for the month of March (and the first week in April) we will be counting down our Top 5 favorite cupcake places outside of Baltimore City. In order to make sure we did the proper research and included places that would “qualify” we decided that any place that was within a 20 to 45 minute drive from the Baltimore City boundary would be included. If you don’t see a place that you think should have been featured in this Top 5 let us know! We do our best to research where the cupcakes are, but there is no better way to find out than a recommendation!

I’ve been enjoying Starry Night Bakery and Coffeehouse’s cupcakes for quite a while now, located in Westminster, MD. They made it to the final round on the Food Network’s Cupcake Wars due to their creative flavors and fun designs. Aside from cupcakes, they also have a full coffee shop of inventive beverages, cakes, cookies, and other pastries. When we decided to do a Top 5 of the Baltimore suburbs, I knew I wanted them to be on the list. That was my cue to make sure that the other Crusaders had a taste of what makes Starry Night so exceptional!

One of the fun things about Starry Night is their quirky side…hence the name for their specialty cupcakes, or “Quirky Cupcakes.” This quirkiness starts with the cupcakes and cakes, but then spreads throughout the shop, with fun décor, including hand-painted murals on the wall. I love a place where I can grab a cup of coffee and sweet treat with a friend, and just sit and feel “cool.” And, Starry Night is that sort of place.

Another great thing about Starry Night is their social media activity. New flavors are posted on their Facebook page, along with photos, and special offers for their Facebook followers. Although their website can be hard to navigate, they’ve used Facebook to its fullest and I often find myself going to pick up a new flavor or take advantage of a special offer they’ve posted about.

We’ve reviewed Starry Night cupcakes many times. A couple of our favorites have been the seasonal Cinnamon Chip, which is unfortunately no longer available for the spring, and the Mahoo Wahoo, which you can usually find and was one of their Cupcake Wars creation.

From our Cinnamon Chip Review:
This cupcake was so moist and packed a great cinnamon sugar punch. I don’t know how they created a cinnamon chip…maybe some sort of streusel…but I can’t stress enough how amazing this cupcake was. While having the cinnamon flavor you’d expect from a cinnamon roll or muffin, it still maintained a cupcake quality, which I loved about it.

From our Mahoo Wahoo Review:
This cupcake uses Kona Coffee and is a chocolate cake with coffee drizzle glaze and coffee buttercream. If you like coffee and you like it strong, as I do, then this is the cupcake for you! Paired with the chocolate it’s a match made in heaven.

With the friendly staff, specialty desserts, coffee, wedding cake tastings, and of course THE CUPCAKES, Starry Night has become a favorite place for the Crusaders to visit. For these reasons they have taken our #2 spot on our Top 5 list! With all the competition and all the cupcakes we’ve tasted to compile the Top 5, Starry Night has proven to be a front-runner in the industry with their creativity and enthusiasm. Although their standard cupcake flavors are not the stars, their “Quirky Cupcakes” are well worth the visit. If you are in the Westminster area, or just a fan of Cupcake Wars, please take some time to grab a cupcake and a specialty drink from Starry Night!

National Capital Area Cake Show’s Cupcake Challange: Taste of the Seasons

This past Saturday, Crusader Jenn and I braved the nasty rain soaked roads and headed to the National Capital Area Cake Show‘s Cupcake Challenge in Annandale, VA. This year’s theme was ‘Taste of the Seasons’ which was well represented with approximately 75 entries. With this many entries and about 700 attendees, we knew we needed a plan of attack, so prior to the show we decided on the flavors we most wanted to sample.

Between the two of us, we only had about 3 duplicate flavors, so we sampled 15 flavors in total. Before I proceed, I should clarify that they were mini cupcakes, so it was easy to taste every flavor in one sitting.

After sampling them all, we decided that it would be slightly overwhelming for our readers to have a full description and critique of 15 flavors, so we have picked our very own 1st, 2nd, and 3rd place winners and then provided you with a peek at the remaining 12. (These selections are not reflective of the competition’s decisions and are solely those of the Crusaders and the 15 flavors we tried).

1st Place: French Vanilla Coffee Creme Brûlée (Season: Winter)

Baker: Inayah Zaman

This was our clear favorite of the night. Amazingly, you could taste all the flavors, and there was an added element of strawberry which was unexpected, but worked incredibly well. The edible gold glitter and the chocolate “handle” added the perfect finishing touches. We both voted for this as our favorite on the People’s Choice ballot.

2nd Place: Cherry Blossom Sake (Season: Unknown)

Baker: Wanda Cushing

The delicate gum paste cherry blossom on top of this mini cupcake matched the mild sake and cherry flavors. Both flavors complemented each other nicely creating a really enjoyable and totally unique cupcake.

3rd Place: Chocolate Covered Coconut Robin’s Egg (Season: Spring)

This adorable mini cupcake had really good coconut flavor throughout. The coconut blended well with the chocolate which somehow managed not to be overpowering. There was even a coconut filling in this tiny little treat!

As you can see, the competition was fierce! Here is a glimpse at the other flavors we tried, with a special “Honorable Mention” for a cupcake we thought was great, but didn’t make it into our final 3:

After sampling all of these bite sized treats, we headed to the auditorium for a live demonstration by Doron Petersan, owner of Sticky Fingers Bakery. Sticky Fingers is a vegan bakery that has competed three times on the Food Network’s show, Cupcake Wars. They have won twice and are the first vegan bakery to ever win on an All-Stars show.

Doron’s demonstration was entertaining and full of great advice for upcoming bakers like, “Take business classes, the rest is easy. You like to eat, you taste it, if you like the way it tastes, it’s good.” That evening she was showing us all how she makes her Chocolate Bananas Foster cupcake. Even with all the sampling we had done, by the end of the demo, our mouths were watering hoping to one day try that cupcake.

Following the live demo was a book signing where we got to meet Doron. She couldn’t have been nicer and even posed for a quick picture with us!

We promised her we would be visiting her shop in DC this summer, when the weather got better, and we can’t wait! You will probably also see some of the recipes from her book posted on our blog as I dabble into the vegan baking world!

Overall it was a great night that couldn’t have ended on a better note!
