Elisa’s “From Scratch” Baking Experiment: Peach Cobbler

The Baltimore Cupcake Picnic was quickly approaching and I was all out of ideas for what kind of cupcake to bake. Thank goodness Stacy posted this peach cobbler photo to our Facebook page, because later that evening she suggested I bake them. On a side note: I love peaches and often pick them at Larriland Farm in the summer, so this was the perfect “filled” cupcake for me to try baking.

Of course I followed the recipe carefully (my golden rule of baking), but in the future there’s a couple of changes I would make:

• Chop the peaches smaller – I found that they were chopped a bit too big and made it harder to push into the batter. Next time I’ll make sure they are no larger than the very tip of my pinky, because that size seemed to work best.

• Add more cinnamon to the icing – There’s never enough cinnamon for my taste, and when I made the icing it seemed to lack flavor, so I very carefully added more and more until it tasted right. Overall I doubled the amount of cinnamon the recipe called for and beat the icing for 15 minutes so it would loose that gritty sugar taste and texture.

Though the picnic was canceled, my peach cobbler cupcakes were a huge hit with everyone that gathered at Stacy’s house. Mr. Ross, Jenn and Stacy’s dad and fellow cupcake lover, said it was his favorite cupcake of the day, and maybe ever! What a grand compliment for a humble, at-home-recipe-following-baker! My mom – who also loves peaches – really liked it too; she was also my icing tester, so that’s why the icing turned out so well. Thanks so much for your help mom. Crusader Stacy said it was the best cupcake of all my baking experiments – and I owe it to her for suggesting the recipe.

Overall this recipe was very easy to follow, easy to make, and tasted great! It is a cupcake I look forward to making again. Maybe next time, with a little more planning, I can make them with peaches I picked myself.

Happy Hour Cupcakes from Kupcakes & Co.

Summer may be coming to an end, but Kupcakes & Co. decided to go out with a bang. All last week was their Happy Hour Week, with a featured cupcake fashioned after popular drinks and special offers to go along with them.

I had a chance to stop by and sample some of the week’s offerings. As usual, I was greeted with a friendly smile and eagerness to help out.  They were only featuring one happy hour cupcake a day, and on this day the option was Piña Colada.

This cupcake had Kupcakes & Co.’s signature light, moist cake, flavored with coconut (and rum?), pineapple frosting, and was topped with coconut. As soon as I bit into the treat I thought, “Wow! It tastes just like the drink!” It’s one of my favorite Piña Colada cupcake to date and made me crave the actual drink, just to continue the flavor.

Due to my timing in stopping by the shop, I was fortunate enough to get the cupcake that would be featured the next day: Margarita, my favorite drink! I’m sure you can imagine my excitement.

The Margarita cupcake had a lime, rum cake (although I didn’t really detect the rum), with a lime frosting, sprinkled with salt, and topped with a festive paper umbrella. Although the cake was amazingly moist and light, just how I like it, there was one thing still missing for me: the telltale tequila flavor. Since I love margaritas, I would have liked to pick up hints of tequila. But I am glad they added salt, because a lot of margarita cupcakes skip the salt, and I’m a salt on the rim girl.

Whenever I’m at Kupcukes & Co. I always scan the display case for new flavors I haven’t had before. They have a large rotating menu, and on this day I saw Peach Cobbler. The moist peach cake maybe could have used more peaches, but then again that could have made the cake mushy. I particularly loved the crumb/streusel topping and small dollop of vanilla bean frosting. Frosting lovers might not agree, but I thought it was the perfect amount for a cobbler cupcake, just like having a scoop of vanilla ice cream on the side.

While we don’t usually review cookies, this item needs to be mentioned. Besides, it has frosting so that makes it okay. This summer, Kupcakes & Co. has been offering a margarita sandwich cookie. The only way to describe it is to say it’s amazing. On my last visit, they only had the cookies without frosting. I really liked the cookies and thought the frosting might make this treat too sweet for me, but I was wrong! The sandwich cookie had the perfect amount of salt to balance the sweet. Dare I say I may have liked this more than the cupcake? I can’t even pinpoint why, with them both sporting the same frosting, but it was just that good.

Special Mention:
Cassis Macaroon from Apple Pie Bakery Café,
The Culinary Institute of America
While I was there I talked to the owner, Michelle, about her twin daughters going off to college. Allison just started at JMU and Amanda is at the CIA in New York. She is such a proud mom (as she should be!), and took the opportunity to share with me what sorts of treats come out of the CIA kitchens, include one of the amazing macaroons. If I’ve had a macaroon before, it was forgettable, but this one was not. It had the perfect texture I’ve heard described on The Food Network, crunchy and smooth on the outside, soft on the inside, with a mild, but sweet flavor. Hopefully macaroons of this quality will be a part of the menu at Kupcakes & Co. in the future. And now I’m really curious what the cupcakes at Apple Pie Bakery Café are like…

Baltimore Cupcake Picnic – Rain Rain chased the picnic away!

Sadly, due to inclement weather, we had to cancel our Baltimore Cupcake Picnic in Patterson Park. We were really sad the rain chased our picnic away, but luckily, for our family and very close friends, Crusader Stacy graciously opened her house so that we could gather together and share the cupcakes we’d already made.

We all couldn’t help but dig in right away, especially after hearing so much about Crusader Stacy’s Nerd cupcakes! As more people showed up, we made room on the table for the cupcakes – some store bought, some homemade. It was great when the tasting was in full swing, with so many kids there, it was hard not to feel like a kid yourself, eating more sugar than necessary and maybe even getting a tummy ache.

Overall there was an amazing variety of cupcake flavors in attendance:

1 & 2) Crusader Jenn’s FUN da-Middles mini Cupcakes, two ways – one with salted caramel and one without the salt
3) Crusader Stacy’s Nerds Cupcakes – keep an eye out for this recipe post!
4) Black Bottoms from a local bakery – yum!
5) Crusaders’ Dad brought four flavors of cupcakes from Sweet Hearts Patisserie, a cupcakery in Annapolis the Crusaders have been wanting to try. Watch for this review!
6) Crusader Elisa brought homemade Peach Cobbler cupcakes that Crusader Stacy had suggested on our FB page – thanks again for the suggestion!
7) A friend made Homemade Ginger Peach cupcakes, filled with a peach compote that was very flavorful
8) Crusaders’ sister Alissa and her friend brought red velvet cupcakes
9) Chocolate Chip cupcakes with peanut butter frosting, made by a friend
10) Healthy Crusader Rebecca brought healthy Black Forest cupcakes – watch for this healthy recipe post coming soon.

It might have been a rainy day, but we had a great time with our family and close friends. So many cupcakes, so many kiddies, so many wonderful people all in the same place! It was the perfect way to spend a rainy afternoon.

The Crusaders would like to thank everyone who made it out to our picnics this summer. It’s been a great opportunity to meet our fellow cupcake lovers, try some new flavors, and spend time talking about cupcakes! Can’t wait for next summer!

Partying in Western New York with Cupcakes

Stacy and I have been traveling together for many years, and each time I’m reminded why she’s my favorite travel partner-in-crime! We always seem to find fun, even when we are least expecting it. This past weekend we trekked up to Hilton, NY for our friend Alli’s daughter, Freya’s, 1st birthday and house warming party. On our way there, we needed to stop for something to eat, and after randomly selecting an exit (Corning, NY to be exact) we ended up smack-dab in front of Walker Cake & Coffeehouse – with a cupcake on the awning!

It was kismet, we were meant to take that stop and run into our first cupcake taste of the trip. (Honestly, it would amaze people if they knew how often things like this happened when Stacy and I were together.)

Walker Cake & Coffeehouse Cupcakes:

“Mega” Size Chocolate Peanut Butter
In Stacy’s own words: “The ganache was thick and set up like the frosting on a chocolate frosted doughnut from DD… So good! The peanut butter frosting was really thick, almost like the peanut butter you would find in a buckeye or Reese’s Peanut Butter Cup. I have mixed feelings on whether that’s appropriate for a frosting, but it was SO GOOD. The cake was dense and crumbly but moist.

Carrot Cake
Unusual in flavor, this carrot cake might be the best carrot cake cupcake I’ve ever eaten. The frosting was not the usual cream cheese, but was a thick and subtly sweet buttercream, a perfect complement to the moist, spicy, and savory cake. This cake was not like any carrot cake I’ve ever had – there was something special about it – neither Stacy nor I could put our finger on what it was, but it really made this cake stand out and shine. I only wish I had gotten in the “mega” size, because this cupcake left me wanting more.

Soon after, we arrived at Freya’s 1st birthday party and enjoyed watching her play, spending time with our friends, relaxing with a beer, and eating the delicious cupcakes that Alli made for the party. They were a chocolate stout beer cake with a cream cheese frosting. YUM! They tasted as good as they looked, in fact, I couldn’t resist eating just one.

Stacy researched and found fantastic and fun things for us to do – so after eating a wonderful breakfast the next morning at our B&B, White Farm, we headed over to Avon, NY for a huge flea market. We found some fun items to purchase, walked around for a long while, and worked up an appetite for cupcakes.

Our first cupcake stop of the day was in Penfield, NY called Dollop. They’ve won Cupcake Wars and had an interesting “build-your-own” spin on a cupcakery. After selecting our cake, frosting, filling, and toppings we were ready to order, and eat!

“Peach Cobbler” (Vanilla Cake, Peach Filling, Cream Cheese Frosting, and topped with White Chocolate Chips)
So good! Loved the cream cheese frosting even if it was a bit runny. Vanilla cake was a great texture and the filling was perfect.

“Caramel Apple Pie” (Vanilla Cake, Apple Pie Filling, Caramel Frosting, and topped with Graham Crackers and Caramel Sauce)
This cupcake was just as good as the Peach Cobbler. The caramel drizzle was a great addition because the caramel frosting was very subtle. The star of this cupcake was really the filling though!

“Caramel S’mores” (Chocolate Cake, Marshmallow Filling, Caramel Frosting, and topped with Graham Crackers and Marshmallows)
Really worth the wait! The cake was moist and had great texture, the fluff filling was basically melted into the cake, but had great flavor, the icing was subtle in caramel flavor, and the graham cracker and marshmallow topping made this the perfect combination.

“Cinnamon Apple Pie” (Vanilla Cake, Apple Pie Filling, Cream Cheese Frosting, and topped with Cinnamon)
Yummy vanilla cake with very flavorful apple pie filling, cream cheese frosting and cinnamon sprinkled on top = delicious. All of the components of this cupcake were shinning stars, I couldn’t pick my favorite part, I just want to order another one.

Stacy and I agreed that the pricing at Dollop was a bit more than expected for that size cupcake:

Cake & Frosting: $2.50
Filling: $.25
Topping: $.50
**You can earn a free filling with your first Foursquare Check-in

However, after tasting the cupcakes, neither of us minded spending almost $4 for each one.

After Dollop, we headed to Pittsford, NY to visit Dolce Cupcakery. This adorable shop was in an old barn and was so cute; inside was really lovely, with adorable photos of kids eating cupcakes on the walls. What a slice of heaven that whole area is, situated right on the canal we decided to eat lunch there too, but back to the cupcakes:

Blueberry Pancake
This cupcake was a slight disappointment as the frosting seemed to be made with a large amount of shortening, which we weren’t fans of. It made the frosting lack depth of flavor and left your mouth coated in a greasy film. The cake had really great flavor and seemed to be a blend of blueberry cake and brown sugar cake. While the flavor was good, it was very dense, more like a muffin.

Peanut Butter Chocolate
The cake was a bit heavy, but that is the only negative thing I have to say about this cupcake. The frosting was very flavorful, thick, and unlike the Blueberry Pancake cupcake didn’t seem to have any shortening in it, thank goodness. The cake had a peanut butter cup baked into it, which is always fun and adds another level of texture. Maybe it was the frosting that made me love this cupcake so much, maybe it was the chocolate flavor of the cake, either way, I scraped the plate clean.

It was a fantastic weekend, full of friends, food, drinks, and cupcakes. Stacy and I are so lucky to be able to travel all around and spend time doing things we both love. I can’t wait to see what our next trip will be, and I wonder what we’ll randomly run into next time!

National Capital Area Cake Show’s Cupcake Challange: Taste of the Seasons

This past Saturday, Crusader Jenn and I braved the nasty rain soaked roads and headed to the National Capital Area Cake Show‘s Cupcake Challenge in Annandale, VA. This year’s theme was ‘Taste of the Seasons’ which was well represented with approximately 75 entries. With this many entries and about 700 attendees, we knew we needed a plan of attack, so prior to the show we decided on the flavors we most wanted to sample.

Between the two of us, we only had about 3 duplicate flavors, so we sampled 15 flavors in total. Before I proceed, I should clarify that they were mini cupcakes, so it was easy to taste every flavor in one sitting.

After sampling them all, we decided that it would be slightly overwhelming for our readers to have a full description and critique of 15 flavors, so we have picked our very own 1st, 2nd, and 3rd place winners and then provided you with a peek at the remaining 12. (These selections are not reflective of the competition’s decisions and are solely those of the Crusaders and the 15 flavors we tried).

1st Place: French Vanilla Coffee Creme Brûlée (Season: Winter)

Baker: Inayah Zaman

This was our clear favorite of the night. Amazingly, you could taste all the flavors, and there was an added element of strawberry which was unexpected, but worked incredibly well. The edible gold glitter and the chocolate “handle” added the perfect finishing touches. We both voted for this as our favorite on the People’s Choice ballot.

2nd Place: Cherry Blossom Sake (Season: Unknown)

Baker: Wanda Cushing

The delicate gum paste cherry blossom on top of this mini cupcake matched the mild sake and cherry flavors. Both flavors complemented each other nicely creating a really enjoyable and totally unique cupcake.

3rd Place: Chocolate Covered Coconut Robin’s Egg (Season: Spring)

BAKER: Monica Pearson of Monica’s Sugar Studio
(This year’s 1st place winner in the ‘Professional Spring’ category, voted by the competition judges. This baker was also last year’s ‘Best Professional Cupcake’ winner)

This adorable mini cupcake had really good coconut flavor throughout. The coconut blended well with the chocolate which somehow managed not to be overpowering. There was even a coconut filling in this tiny little treat!

As you can see, the competition was fierce! Here is a glimpse at the other flavors we tried, with a special “Honorable Mention” for a cupcake we thought was great, but didn’t make it into our final 3:

Honorable Mention: Root Beer Float (Season: Summer)
Baker: Deanna Rybak
(This year’s 1st place winner in the ‘Amateur Summer’ category, voted by the competition judges.)

1: Gluten Free Eggnog Coco (Season: Winter) – BAKER: Caroline Litt
2: Gingerbread with Lemon Curd (Season: Winter)
– BAKER: Trevor Burroughs, “The Cake Guy” featured on Food Network’s Sweet Genius
3: Carrot with Orange Marmalade (Season: Spring)
– BAKER: Linda McLean
4: Orange Creamsicle (Season: Spring)
– BAKER: Sandy Schmuff, Dessertabilities
5: German Chocolate Easter Egg Nests Cake Ball (Season: Spring)
– BAKER: Emily Baird, Alexandria Cake Pop Company (They won this year’s 1st place winner in the ‘Professional Winter’ category for their Peppermint Chocolate Cake Pop, voted by the competition judges.)
6: Piñajito (Pineapple Mojito) (Season: Summer)
– BAKER: Catherine Baroang
7: Peach cobbler (Season: Summer)
– BAKER: Lora Gookin, Gâteau (This year’s 1st place winner in the ‘Professional Summer’ category, voted by the competition judges.)
8: Maple & Rum Flavored Pumpkin (Season: Fall)
– BAKER: Juanita Holloway
9: Chocolate Bacon Chipotle (Season: Fall)
– BAKER: Kyle Downes (Tied for 6th Place People’s Choice)
10: Red wine poached pear (Season: Fall)
– BAKER: Tracy Fuller, Simply Desserts
11: Gluten Free Chai Brown Butter Meringue (Season: Fall)
– BAKER: Becky Rink

After sampling all of these bite sized treats, we headed to the auditorium for a live demonstration by Doron Petersan, owner of Sticky Fingers Bakery. Sticky Fingers is a vegan bakery that has competed three times on the Food Network’s show, Cupcake Wars. They have won twice and are the first vegan bakery to ever win on an All-Stars show.

Doron’s demonstration was entertaining and full of great advice for upcoming bakers like, “Take business classes, the rest is easy. You like to eat, you taste it, if you like the way it tastes, it’s good.” That evening she was showing us all how she makes her Chocolate Bananas Foster cupcake. Even with all the sampling we had done, by the end of the demo, our mouths were watering hoping to one day try that cupcake.

Following the live demo was a book signing where we got to meet Doron. She couldn’t have been nicer and even posed for a quick picture with us!

We promised her we would be visiting her shop in DC this summer, when the weather got better, and we can’t wait! You will probably also see some of the recipes from her book posted on our blog as I dabble into the vegan baking world!

Overall it was a great night that couldn’t have ended on a better note!
